Swiss Cheese Fondue

Ingredients

  • 16 oz Gruyere cheese, grated
  • 12 oz Swiss Cheese, grated
  • 1 cup dry white wine
  • 1 clove garlic
  • 1/2 tsp lemon juice
  • 1 teaspoon cornstarch
  • 1/3 teaspoon freshly ground nutmeg
  • 1 tablespoon kirsch
  • Note: don’t use pre-shredded cheese as it contains additives and won’t melt as smoothly.

Instructions

  1. Mix white wine and corn starch in cast iron pot and stir until dissolved.
  2. Gently heat wine over medium heat.
  3. Add cheese to hot wine one cup at a time, stirring until completely melted and smooth before adding the next cup. Add one clove of minced garlic and nutmeg after 2 cups of cheese have melted.
  4. Once all cheese has melted, add lemon juice for texture and 1 T. Kirsch for classic Switzerland fondue flavor.
  5. If necessary, transfer cheese mixture to slow cooker or tabletop heater to serve.
  6. Dip bite-sized portions of food into cheese fondue and enjoy.

Ideas to Dip in Cheese Fondue

  • Cubes of crusty bread like French, sourdough, croutons
  • Assorted vegetables, broken or chopped into bite sizes
  • Proteins like ham, sausage and salami
  • Select fruits like granny smith apples or pears, chopped
  • Get creative with roasted potatoes, pickles, large pasta shapes



Lindt Swiss Chocolate Fondue

Ingredients

  • 3 bars (3.5 oz each) Lindt Excellence 78% Cacao Dark Chocolate, chopped
  • 3 bars (3.5 oz each) Lindt Excellence Extra Creamy Milk Chocolate, chopped
  • 1¾ cups heavy whipping cream

Instructions

  1. Chopped chocolate into 1″ pieces.
  2. Heat cream in cast iron pot over medium heat to just a simmer.
  3. Reduce heat to low and add chocolate.
  4. Stir until mixture is smooth and shiny.
  5. If necessary, transfer to a fondue pot, slow cooker or pot on tabletop warmer.
  6. Dip bite-size portions of food into the chocolate and enjoy!

Ideas to Dip in Chocolate Fondue

  • Assorted fruits: bananas, raspberries, strawberries, pineapple, apples
  • Sweets like Marzipan, marshmallows, pound cake
  • Crisp cookies like oreos, graham crackers, pirouline
  • Salty treats like pretzels, potato chips, bacon

Schumli Pflumli

Ingredients (serves 1)

  • 1 cup coffee, hot and strong
  • 1 1/3 oz plum liqueur (Pflümli)
  • 2 tsp sugar
  • whipped cream
  • pinch cocoa powder

Schumli Pflumli Instructions

  1. Gently heat a stemmed glass in the microwave.
  2. Add sugar to the heated glass followed by the plum liqueur.
  3. Add hot coffee.
  4. Top with whipped cream and a dusting of cocoa powder
  5. Serve with a spoon



Homemade Hot Chocolate

Ingredients (serves 4)

  • 1 quart whole milk
  • 1 stick of cinnamon (optional)
  • 4.5 oz Swiss dark chocolate (highest quality), finely chopped
  • Sugar to taste

Topping ideas:

  • whipped cream
  • chocolate curls
  • cocoa powder

Instructions

  1. Heat the milk (and cinnamon if using) just to the boil.
  2. Remove the cinnamon stick and pour hot milk into four glasses or mugs.
  3. Stir just over 1 oz of shredded chocolate into each glass until it has dissolved.
  4. Add sugar to taste, if desired.
  5. Top with whipped cream, chocolate curls and/or cocoa powder.
