Norwegian Waffles

Waffle Ingredients
  • 3.5 Tbsp butter
  • 2 eggs
  • 1/4 cup sugar
  • 2.5 cups milk
  • 2 cups flour
  • 1/4 tsp salt
  • 1 tsp freshly grated cardamom
  • 1 tsp baking powder
Waffle Instructions
  1. Melt the butter in a small bowl.
  2. In a large bowl, whisk eggs and sugar together.
  3. Wisk in half the milk
  4. Add flour, salt, cardamom and baking powder. Wisk until smooth.
  5. Add the rest of the milk and the melted butter. Wisk until smooth.
  6. Batter should be thin. Let it rest 1/2 hour.
  7. Heat a heart-shaped waffle iron, like this one.
  8. Brush waffle iron with butter for each waffle. Add about 1 dipper full of batter and cook until light golden brown.

  • Norwegian brown cheese
  • Fresh fruit
  • Sour cream and Jam
  • Butter and Sugar

Fjellbekk (Mountain Stream Cocktail)

Ingredients (serves 4)
  • 4 oz Aquavit
  • 4 oz Vodka
  • 2 oz Lime Juice
  • Lemon-Lime Carbonated Soda
  • Ice
Instructions
  1. Fill a tall glass (highball) with ice cubes.
  2. Add the aquavit, vodka and lime juice.
  3. Top with soda and stir.
