Yakitori Chicken Skewers

Ingredients (serves 4+)

  • 1 lb of chicken thighs
  • 1 1/2 cups mirin rice wine
  • 3/4 cups soy sauce
  • 4 Tbsp sugar
  • garlic
  • Rice or noodles, prepared


  1. Make the sauce:
    • Combine mirin rice wine, soy sauce, sugar and garlic in a sauce pan.
    • Bring to a boil, then turn down the heat
    • Simmer sauce for about 5 minutes until sauce is thickened and reduced by about a third.
  2. Cook the skewers:
    • Soak skewers in water for 30 minutes.
    • Cut chicken thighs into 1-inch pieces, then thread the chicken onto the skewers,
    • Grill the chicken on all sides until just browned.
    • Brush sauce on on sides, turning and basting every 30 seconds until cooked through.
  3. Serve over rice or Udon noodles

Matcha Tea Latte

Ingredients (per serving)

  • 1 tsp matcha (green tea powder)
  • 2 tsp sugar
  • 3 Tbsp warm water
  • 1 cup cold milk or 1 1/4 cup hot milk


  1. Add matcha, sugar and warm water to a mug.
  2. Whisk until there are no more lumps and a smooth dark green paste forms.
  3. Add milk to the mug and whisk the milk and matcha paste together briskly until smooth and light green in color.
    • For hot matcha, warm milk in a small sauce pan, then mix into the matcha paste.
    • For a matcha latte, whisk in cold milk and then add ice.
