Yakitori Chicken Skewers
Ingredients (serves 4+)
- 1 lb of chicken thighs
- 1 1/2 cups mirin rice wine
- 3/4 cups soy sauce
- 4 Tbsp sugar
- garlic
- Rice or noodles, prepared
Instructions
- Make the sauce:
- Combine mirin rice wine, soy sauce, sugar and garlic in a sauce pan.
- Bring to a boil, then turn down the heat
- Simmer sauce for about 5 minutes until sauce is thickened and reduced by about a third.
- Cook the skewers:
- Soak skewers in water for 30 minutes.
- Cut chicken thighs into 1-inch pieces, then thread the chicken onto the skewers,
- Grill the chicken on all sides until just browned.
- Brush sauce on on sides, turning and basting every 30 seconds until cooked through.
- Serve over rice or Udon noodles
Matcha Tea Latte
Ingredients (per serving)
- 1 tsp matcha (green tea powder)
- 2 tsp sugar
- 3 Tbsp warm water
- 1 cup cold milk or 1 1/4 cup hot milk
Instructions
- Add matcha, sugar and warm water to a mug.
- Whisk until there are no more lumps and a smooth dark green paste forms.
- Add milk to the mug and whisk the milk and matcha paste together briskly until smooth and light green in color.
- For hot matcha, warm milk in a small sauce pan, then mix into the matcha paste.
- For a matcha latte, whisk in cold milk and then add ice.
